Aged 16-24 Mo
Sharp yet rich, crumbly and complex...our Extra-Old Cheddar is definitely worth the wait. It pairs wonderfully with fruits, nuts, jams, charcuterie, pickles, even dark chocolate! However, our favorite is straight up. This cheese is a testament to the quality of our milk, the craftsmanship of our cheesemakers and the art of aging.
Aged 2-10 YRS
This extra mature cheese, aged at least 2 years, is a testament to St. Albert’s passion, know-how, and dedicated team. Like all our cheeses, these are made with 100% pure Canadian milk.
A wonderfully creamy texture contrasted with a very welcome sharpness is what makes these cheeses truly special.
