Heritage in the making
Tradition in every bite
In our process of aging cheese, flavor is not just developed; it's cultivated. Starting with 100% Canadian milk sourced directly from local farms, the journey from farm to plate begins. As the cheese matures, each day adds depth and character, transforming it into a distinctive flavor profile over time. This dedication to quality, from the hands of farmers to the expertise of cheesemakers, ensures that every bite tells a story of heritage, craftsmanship, and Canadian terroir.
Flavor Profiles
2022
Fruity, Creamy, and easy to get along with.
Notes
Distinction 2 years, a smooth texture and a rich, buttery flavour with a hint of tanginess. Ideal for snacking, cooking, or pairing with your favourite wines.

2021
Round flavours and sharp notes
Notes
The 3 year cheddar is the tipping point between an all-round cheese and a charcuterie board cheese. It’s had time to develop the complex nutty flavours that we love.

2020
The all-round aged cheddar
Notes
4 year aged cheddar hits a sweet spot between texture, mouth-feel and taste. It’s not yet hit peak crumbliness, and the salt crystals are just starting to form.

2019
Bold, strong flavours
Notes
Our 5 year cheddar is a particularly good cheddar, with a delicious creaminess and complex flavour profile. It starts strong before mellowing out.

2014
Better with age, and LOTs of TLC
Notes
Our 10 year cheddar is special. A deep, bold flavour. Perfect on its own. Cheddar becomes almost like butter when aged this long, enveloping your taste buds.
