A semi-firm blue cheese aged 2 to 3 months. Rustic, creamy, and known as the only blue cheese produced in Outaouais.
Adoray
Soft cow’s milk cheese wrapped in spruce bark and aged 21 days. Salted butter, wood, spice, and damp hay notes.
Manchebello
Firm sheep’s milk cheese aged 6 months, with hazelnut and meadow-flower notes. Currently limited while sheep milk supply is restricted.
